Chopped Brussels Sprouts Salad

Holy crunchy deliciousness Brussels sprouts!!


Crunchy and quick!!  Took me about 10 minutes and it was ready to eat!

Prep time: 10 minutes
Cook time: n/a
Servings: 2-4


INGREDIENTS:

1-2 lbs Brussels sprouts, shredded or chopped
2 celery stalks, finely sliced
10-15 green seedless grapes, sliced in halves
15 pecan halves
6 Tablespoons Extra Virgin Olive Oil
2 Tablespoons White Balsamic Vinegar
3-5 fresh basil leaves chopped (or more, depending on your taste)
Salt & Pepper (optional, to taste)


DIRECTIONS:


  • In a medium to large bowl, add the prepared Brussels sprouts, celery, grapes, and pecans.
  • Mix olive oil and balsamic vinegar in a small jar and shake to mix (or in a bowl, using a whisk to mix)
  • Slowly pour dressing mix over the salad until it’s coated to your liking.
  • Add basil and toss.
  • Serve and EAT!


I'm actually thinking I might try adding shredded white cheese next time....possibly mozzarella.... Think that would work??
