A mandoline or a hand-held slicer will quickly turn out thin, even slices of sweet potato, although a sharp knife and a steady hand will also work fine.

2 medium sweet potatoes, scrubbed and sliced 1/8 inch thick
1 tablespoon extra-virgin olive oil
1/2 teaspoon coarse salt, preferably sea salt
1 lime, cut into wedges, for serving


DIRECTIONS

Preheat oven to 400 degrees, with racks in center and lower positions. Divide sweet potatoes between 2 rimmed baking sheets. Drizzle with oil, toss, and spread them in a single layer on sheets. Bake, flipping once, until centers are soft and edges are crisp, 22 to 25 minutes. Sprinkle with salt, and serve with lime wedges.

Everyone always oohs and ahhs when the turkey is brought out to the table. But that’s not usually the case with the side dishes. (Poor green-bean casserole.) This recipe for beet and potato roast is about to change all that. We slice golden and red beets and Yukon Gold potatoes super-thin, put them into stacks and then arrange them in a skillet to form a spiral. We mean, just check out that photo--vegetables never looked or tasted so good.

BBQ Margarita Chicken Tostadas!

INGREDIENTS

BBQ Margarita Chicken
1 pound boneless skinless chicken breast
1 tablespoon olive oil
1 cup of your favorite BBQ Sauce
2 tablespoons tequila (optional)
2 teaspoons lime zest
2 teaspoons orange zest
1 lime, juiced
1 clove garlic, minced or grated
1 jalapeño, seeded + finely chopped
1 teaspoon cumin
1/2 teaspoon salt + pepper

Baked Honey-Marinated Cod



INGREDIENTS

4, 6-oz black cod fillets (aka sablefish)
¾ cup honey
½ cup low-sodium soy sauce
⅓ cup toasted sesame seed oil
⅓ cup apple cider vinegar
1½ tsp freshly ground pepper
1 tsp freshly chopped ginger 

INSTRUCTIONS

Combine all ingredients (except for fish) in a medium-sized airtight mixing bowl. Add cod and marinate for 24 hours. If possible, flip half way through marinade time to allow even flavor distribution.
Preheat oven to 450 degrees F; prepare a baking sheet with parchment paper. Remove cod from marinade and bake on the center rack for 7-9 minutes, until cod is opaque and flakes easily.

Making muffins from scratch each morning is easier than you might think.

Ingredients:
1/4 cup quick-cooking oats
1/4 fresh or frozen blueberries
1 tsp baking powder
2 TBSP ground flax
2 tsp cinnamon
1 tsp olive oil
2 egg whites
sprinkle of sugar (or other natural sweetener)

Directions:
Mix quick-cooking oats, blueberries, baking powder, ground flax, cinnamon, olive oil, egg whites, and a sugar in a microwave-safe Tupperware container.

Cook on high for 50 to 60 seconds. Let it cool, throw a top on it, and enjoy whenever the hunger pangs hit.

Ingredients

3 tbsp spelt flour (30g) (or ww pastry, white, or Bob’s gluten-free)
1/4 tsp baking powder
heaping 1/16 tsp salt
1-2 tbsp blueberries (fresh or frozen)
1/2 tsp vanilla extract
1 tbsp coconut or veg oil (You can use applesauce if you don't mind the taste of fat-free baked goods)
1 tbsp plus 1 tsp milk of choice (Use less if using liquid sweetener)
pinch uncut stevia OR 1 tbsp sugar or liquid sweetener


Instructions

Preheat your oven to 330 degrees. (Or continue reading for microwave option.) Mix dry ingredients, then add wet. Mix until just combined (don’t overmix), and bake for 17 minutes or so. Baking time will vary, depending on the flour and oil/applesauce you use. If you don’t want to heat your oven for just one muffin, you can make this in the microwave! Just grease/spray a little dish, pour batter in, heat for 90-ish seconds, and enjoy!
