Cheesy Spaghetti Squash "Lasagna"

Do you smell what The Rock is cook...oh wait...I got a little excited. I made this bubbly, delicious lasagna goodness for Meatless Monday and I wish you could smell your screen!
(Go ahead and try to smell it...while your at it, tap the "share" button with your nose)


I was craving lasagna, but didn't want all those carbs that pasta has. So I used spaghetti squash in place of noodles. And it was delicious!!


This fits perfectly in my 8x8 baking dish. So if you're using a 9x13 or bigger, I suggest doubling the recipe.

Homemade Clean Eating BBQ Sauce

I made this BBQ sauce last night and it's delicious!!  Plus, it's healthier and doesn't have the added sugars and preservatives the pre-bottled sauces have. I'm excited for grilling season!

BBQ Pineapple and Pork Kabobs

BBQ Pineapple and Pork Kabobs

INGREDIENTS:

2 lbs pork loin chops, cut into 1-2 inch pieces
2 large cans of pineapple chunks with juice (or 1 ripe, fresh pineapple)
4 large green or red bell peppers (or both), cut into large chunks
10 large mushrooms (optional), halved
1 cup fresh cilantro, chopped
2 TBSP onion powder
2 TBSP garlic powder
2 TBSP black pepper


DIRECTIONS:
  • Preheat your BBQ ready and get it ready!
  • In a large mixing bowl, add all ingredients. Cover and place in the fridge to marinate for at least 30 minutes. 
  • Alternate pieces of pork, pineapple, peppers, and mushrooms on the kebobs. Metal skewers are the best to use. If you're using wood skewers, be sure to soak them ahead of time in water so they don't burn!
  • Grill for approximately 30 minutes on low-medium heat (approximately 350 degrees F. if you have a thermometer on your BBQ). Use a meat thermometer to be sure meat is thoroughly cooked.

If I Was a Spy... I'd Need This Erasable, Microwavable Notebook. The ROCKETBOOK!

Oh! I just thought of an idea - if I was a spy or wanted to write my friend a secret note, this would be perfect!  I could write my note and hand it to my friend. Once they read it, they just microwave the notebook and VOILA! The secret is gone from the pages!  That's it!  I'm ordering this!!  :D

Okay, I'm not a spy...but if i was, how great is this?!!

Seriously though - I love this idea!  How many notebooks do you use for notes, ideas, recipes, meal plans, etc., and then seem to lose track of where you kept those important notes?!  I do this often....

So when I came across this reusable notebook, I had to read more!  This is one notebook. You upload, organize, and now you're able to search for what you need without having a bunch of notebooks lying around your house.

Who knew pumpkin in chili would add such an awesome flavor and texture?! This chili has a delicious and unique flavor - just look at the ingredients and spices we used in the mix!  No chili seasoning packets used in this recipe! 

This recipe is extremely easy and my nephews were really excited to help me make this. Don't be scared of the cocoa powder and cinnamon. This has become my favorite chili recipe by far!

My nephews loved it and asked for seconds!  My parents thought it was a little too spicy and I thought it needed to be more spicy. The avocado adds a nice touch of flavor and contrast to the chili.

Chicken and Vegetables in Peanut Sauce

Have you ever found a recipe that sounded amazing when you found it?  In retrospect, maybe I shouldn't go recipe hunting when I'm hungry.  I find a lot of recipes that sound good... 

Well, I found this recipe the other day.  It caught my attention and decided to try it.  I needed another recipe for my weekly meals. 
  • Chicken = good. 
  • Sweet potatoes = good.  
  • Red bell peppers = good. 
  • Turnips = okay.  
  • Peanut butter = YUM!

Overnight Quinoa. Something Different Than Oatmeal for Breakfast.


INGREDIENTS:

1 cup cooked quinoa
1/2 cup unsweetened almond milk
1/4 cup nonfat Greek yogurt
1 tablespoon chia seeds
1 teaspoon vanilla extract
1 teaspoon honey
frozen fruit of choice


DIRECTIONS:

  • Combine all the ingredients except the fruit. Be sure to mix well. Stir in frozen fruit. If using fresh fruit, I recommend adding the fruit the next morning, right before you eat it.
  • Cover and place in the refrigerator at least 4 hours or overnight.
  • The next morning, remove from the fridge and enjoy.

Balsamic Asparagus & Peppers

Even though this recipe says "asparagus and peppers," this goes amazingly well with zucchini, green beans, and practically any other vegetable you love. You can roast these in the oven or on the grill.

Delicious Cheesy Mashed Cauliflower

"Mashed cauliflower tastes similar to mashed potatoes, but with fewer carbs." I kept hearing this, but I was highly skeptical. So I tried them last night. They came out soooo yummy!!  Who knew?!  Delicious and Fluffy Mashed Cauliflower! Oh and I made them CHEESY!!



I was surprised at delicious these were!!  They weren't kidding!!  I actually like these better than mashed potatoes!! Do you know how difficult it was to stop myself from eating the whole pot?!  The only thing that saved me was telling myself I needed these for my lunches this week!

19 Reasons Why Working Out At Home is Better Than The Gym

1.  I can workout anytime I want - I'm not restricted to gym hours, trainer availability, or class schedules. My trainer is ready at the push of a button. I just push "play".

2.  I don't have to leave my house and go out in the cold or heat.

3.  It doesn't matter what I look like. I can workout in my underwear and not be judged, have smeared or no makeup, clothes that don't match, no shoes, whatever I feel like wearing (or not wearing...).

4.  I don't have to worry about someone else's germs on equipment. Ewwww. Flu season…'nuff said.

5.  I don’t have to deal with traffic or trying to find a parking spot.

6.  No one tries to talk to me while I'm trying to get my sweat on.

7.  My iPhone won't be stolen. (Yes, this happened to me and it sucks)

8.  I don’t have to wait for a machine or equipment.

9.  The classes are never full.

10. I don't have to deal with a locker. Or forgetting to bring my lock, headphones, towel, water, shoes, etc.

11. I don't have any weird or old people walking around naked while I'm in the bathroom.

12.  I can be uncoordinated, make weird faces, be comfortable, laugh at myself, and I won't end up on a YouTube fail video...

13. It costs me less than a gym membership and I don't have a contract.

14. My friends can join me at anytime.

15. I'm done, from start to finish, in about 25-45 minutes compared to AT LEAST 2 hours going to the gym: driving there and parking, checking in, getting my locker, working out, realizing I left my headphones in my backpack, going back to my locker, working out, waiting for equipment, showering and getting ready (depending on the day), buying a protein smoothie, and driving home.

16. I have less laundry. (see #3)

17.  I have the best workout partner. My dog, who usually lays on my yoga mat and wants to cuddle at some point - giving me a breather.

18. I can't bring my dog to the gym.

19.  When I’m done, I can sprawl on the floor and lay there as long as I’d like. This is really frowned upon at the gym. Plus, the gym floor is gross and I don't recommend laying on their floor.

Slow Cooker Sriracha-Pineapple Chicken with Guacamole


Slow Cooker Sriracha-Pineapple Chicken with Guacamole

Ingredients:
4 boneless, skinless chicken breasts
1 onion, thick sliced

3/4 cup reduced sugar ketchup
2 Tablespoons Sriracha Rooster Sauce (I use about 2 1/2 to 3 Tablespoons, but you may want to taste it before using that much)
3-4 Tablespoons crushed pineapple (freeze what you don't use from the can)
1/4 cup agave nectar (or if you want a sauce with less sugar, use Truvia or Stevia)
1 Tablespoon rice vinegar
1 Tablespoon soy sauce
1 teaspoon garlic powder

Guacamole:
2 avocados
1 Tablespoon fresh-squeezed lime juice
1/2 teaspoon chili powder
1/2 teaspoon Himalayan Salt
2 teaspoon finely chopped green onion
Optional:  Cilantro to taste

Instructions:  

  • Spray the inside of the slow cooker with non-stick spray.
  • Place onion slices on the bottom of the slow cooker.
  • Place the chicken breasts on top of the onions.
  • In a large bowl, whisk the Sriracha, ketchup, pineapple, agave, rice vinegar, soy sauce, and garlic powder together.  
  • Pour the sauce over the chicken and onions.
  • Set the slow cooker on Low for 6-8 hours or High for 2-3 hours.
  • Remove the chicken and let them cool for a few minutes so you don't burn yourself. Be careful! The chicken will be hot!!  
  • Shred the chicken. I use two forks. It's super easy.
  • Remove the onions, set aside if you want to mix them back in later.
  • Pour the sauce into a small saucepan and simmer over low to reduce and thicken the sauce a bit. I simmer it until it's almost reduced by half.
  • Mix the chicken and the sauce together until the chicken is coated. Add the onions back in if desired.

For the guacamole (doesn't get easier than this!):
  • In a medium bowl, scoop the avocado into the bowl and mash. 
  • Mix in the lime juice, Himalayan Salt, chili powder, and green onion. 
  • Optional: add cilantro 

Serve the chicken on a whole wheat bun with guacamole. 

Variations:
Serve in a whole wheat tortilla or on organic whole wheat bread. 


Mix chicken into an egg white omelet. Add cilantro.

My 2 year old nephew stayed over last night and this morning as I was scrolling through my Facebook feed, I came across a recipe for Banana Bread Brownies. I love banana bread, but didn't want all that sugar and processed ingredients. Plus, that recipe had lots of sugary frosting on top. I found by putting chocolate chips in a baking recipe, it adds enough "sweet" that frosting isn't needed.

This delicious smoothie has the flavor of sweet raspberries and strawberries, plus 12 grams of fiber per serving!

Prep Time: 5 min
Total Time: 5 min.
Yield: 1 serving


INGREDIENTS

1 cup unsweetened almond milk
1 scoop Strawberry Shakeology
1 cup fresh or frozen raspberries
1 cup ice

DIRECTIONS

In a blender, add almond milk, Shakeology, raspberries, and ice.  Cover and blend until smooth.


Weird things happened when I started drinking in the morning...

This is my morning face before Shakeology. Wait. Who am I kidding?  This is my face most mornings.  Just ask my coworkers. Or my family. I hated mornings with a passion!!  


I used to drink my Shakeology in the afternoons, which was great (when I stuck to it).  But I'd find that come the afternoon, I wasn't hungry, so I'd procrastinate drinking it and next thing I know, it's dinnertime... 

Shortly before Christmas my work schedule changed. It switched to start at 7 am now. Ugh, right?!  I already struggled with mornings and getting to work at 8 am. How was I going to do this?! I decided to change my thinking and tell myself I CAN be a morning person.

That didn't work.

I was like a zombie. I may have even growled at people until I finished drinking my coffee. Looking back, I probably still growled at them after drinking coffee and just blamed it on whatever I felt like that day.  This needed to change.

So what if I started drinking Shakeology in the morning?  (Do I dare say it...BEFORE my coffee...) *GASP*

This is when weird things started happening...

Total Time: 3 hrs. 10 min.
Servings:  12 (1 bar each)


INGREDIENTS

2 scoops Chocolate Shakeology
1 cup egg white powder
2 cups old-fashioned rolled oats
2 Tbsp wheat germ
2 Tbsp flax seed
1 tsp ground cinnamon
½ cup unsweetened almond milk
¼ cup raw honey
¼ cup all-natural almond butter
ripe medium bananas, mashed
Nonstick cooking spray

DIRECTIONS


  • Combine Shakeology, egg white powder, oats, wheat germ, flax seed, and cinnamon in a large bowl and mix well. 
  • Mix almond milk, honey, almond butter, and bananas.
  • Press into an 8 x 8-inch pan that is lightly coated with spray. Cover with plastic wrap and press down to flatten into pan. Refrigerate for 3 hours. 
  • Cut into twelve bars.

Servings:  8-12


INGREDIENTS:

2 (15 oz.) cans black eyed peas
1 (15 oz.) can black beans
2 cups corn, fresh or frozen
1 cup red onion, minced
1 green bell pepper, small diced
1 red bell pepper, small diced
1 jalapeno, seeded and minced
5 garlic cloves, minced
1/4 cup minced cilantro
3 scallions, sliced thin
4 tablespoons olive oil
2 tablespoons red wine vinegar
2 teaspoons kosher salt
Juice of 1 lime

DIRECTIONS:

  • Mix all ingredients in a large bowl and toss to combine. 
  • Cover and refrigerate at least one hour. 
  • Serve with tortilla chips, pita chips, on top of burgers, sandwiches, or on the side of your favorite grilled meats and fish.






Quinoa Cowboy Caviar

INGREDIENTS:
1 cup cooked quinoa
¼ cup fresh corn, cut off the cob
¼ cup cooked black beans
¼ cup red bell pepper, chopped
¼ cup chopped red onion
½ lime, juiced
salt and pepper to taste
1/2 avocado, cut into small pieces (or guacamole – whatever you prefer)


DIRECTIONS:
  • Rinse and cook the quinoa according to the package instructions.
  • Meanwhile combine the corn, black beans, red bell pepper and red onion in a bowl. Toss to combine. 
  • Add the cooked quinoa into the mixture, and add the lemon juice and salt and pepper to taste.
  • Add chopped avocado right before serving.

When you're overwhelmed, it's hard to fine time to squeeze in a workout session into your already overpacked scheduled—even though you know any amount of physical activity can help you deal with both of those things. And nothing beats yoga when it comes to squashing down anxiety or stress, and an intense cardio or strength training routines to torch fat and rev your metabolism, so how do you fit it all in? This genius PiYo routine, created by trainer Chalene Johnson combines all of those elements, and gets the job done fast. The moves are inspired by both yoga and Pilates, and you use your own body for resistance, so you’ll build lean, fat-fighting muscle while getting a deep stretch. Plus, the short rest periods and quick pace mean there’s also a cardio component—so while you lengthen and tone your entire body and calm your mind, you’ll rev your heart rate to burn fat and calories. So if you’re looking to maximize what little time you have to get sweaty, this workout is for you.
