BBQ Chicken Burrito Bowls


BBQ Chicken Burrito Bowls

Looking for a quick and easy meals for dinner or lunches? You found one!  These are so easy to make and are great as leftovers for lunches during the work week!



INGREDIENTS:

4 large chicken breasts
2 limes, zested and juiced
1 TBSP garlic powder
1 TBSP onion powder
1 TBSP ground cumin
1 TBSP chili powder
Extra virgin olive oil
Himalayan Pink Salt
Fresh ground pepper

Burrito Bowl Ingredients:

2-3 bell peppers, fresh or grilled (red, green, or yellow)
Black beans, drained
Tomatoes, chopped
Tomatillos, optional
Corn (roasted corn is even better!!)
Shredded cheese (optional)
Fresh cilantro, chopped
Avocado or guacamole
Salsa, optional


DIRECTIONS:
  • In a small bowl, mix the garlic powder, onion powder, cumin, and chili powder together.
  • In another small bowl, zest and juice the limes - set aside 1 Tablespoon for guacamole.
  • Place each chicken breast in the lime zest and juice to coat, then in the spice bowl. You can place the chicken breasts in another dish, cover, and marinate for 20-30 minutes (but not necessary).
  • If you're going to grill the peppers, cut each in half and remove the seeds. Coat each pepper half with olive oil, then sprinkle with salt and pepper. After you grill them, cut into chunks for the burrito bowl.
  • Preheat the grill. It's time to BBQ! Place each chicken breast and veggies on the BBQ and grill until done. Use a meat thermometer to be sure the chicken is thoroughly cooked. Once it's done, let it cool enough to touch, and rough chop or shred the grilled the chicken. 
  • While your grilling the chicken and veggies, make the super easy guacamole (recipe below).
  • Assemble your bowl to your liking and ENJOY!

SUPER EASY GUACAMOLE!

Ingredients:

2 avocados
1 Tablespoon fresh-squeezed lime juice
1/2 teaspoon chili powder
1/2 teaspoon Himalayan Salt
2 teaspoon finely chopped green onion
Optional:  Cilantro to taste


Directions:
  • In a medium bowl, scoop the avocado into the bowl and mash. 
  • Mix in the lime juice, Himalayan Salt, chili powder, green onion, and cilantro. 
  • And ENJOY!
