Recovery Rice Crispies



Recovery Rice Crispy Treat Bars (pictured is my chocolate version)

I made these yummy and healthier version of Rice Crispy Treats, all while sticking to my healthy eating plan! Just because you're eating better, doesn't mean you can't enjoy sweet treats! 


Prep Time: 10 min
Serves: 9


INGREDIENTS

2 Tablespoon coconut oil
1/3 cup raw honey
1 teaspoon pure vanilla extract (no added sugar)
1 1/2 cups rice crispy cereal
1/2 cup quick oats
1/4 cup smooth peanut butter (or any nut butter)
1 dash Cooking Spray Non-Stick

Directions
  • Lightly spray a 9x9 baking dish with cooking spray.
  • Melt coconut oil in a medium-large pot over low heat. Stir in the honey, nut butter and vanilla. 
  • Turn off the heat, and then stir in Shakeology, oats and rice cereal. 
  • Scoop the mixture into the baking dish and press to spread evenly.  Let it cool or refrigerate for about 20 minutes.
  • Enjoy!
