Oven Roasted Chicken with Lemon-Garlic Potatoes and Green Beans

Ingredients:
2 Tablespoons olive oil
2 Tablespoons lemon juice
2 clove garlic
1/8 teaspoon Himalayan salt
1/4 teaspoon pepper
1 Tablespoon olive oil
1/2 lemon, thinly sliced
1/2 pound trimmed green beans
4 small red potatoes, quartered
2 chicken breasts (8 oz each, with or without bones)
Directions:
- In a large bowl, combine olive oil, lemon juice, garlic, salt, and pepper. Separate olive oil mixture evenly into two bowls.
- Place the chicken breasts into one of the bowls. Cover and set in the refrigerator (approximately 15-20 minutes while starting to cook the vegetables)
- Preheat oven to 450°F.
- Coat a baking dish with 1 Tablespoon of olive oil.
- Arrange the lemon slices in a single layer in the bottom of the baking dish.
- In the remaining olive oil and lemon mix, add the green beans and potatoes. Toss to coat.
- Use a slotted spoon or tongs, remove the vegetables, and arrange them on top of the lemon slices.
- Bake the green beans and potatoes for approximately 10-15 minutes.
- Carefully remove the baking dish from the oven. Place the chicken on top of the vegetables in the dish. Pour any of the remaining olive-oil mixture over the chicken.
- Roast for 50 minutes or until the chicken is cooked through.
- Serve chicken warm.
Variations:
Try it with broccoli, asparagus, carrots, or any other vegetable you think you'd love in this dish!
