Ingredients:
2 large boneless skinless chicken breasts
3 Tbsp maple syrup
3 medium sweet potatoes, sliced or cubed (with or without skin)
1 lb. baby carrots (or 4-5 peeled carrots sticks)
1/2-1 tsp dried rosemary (optional)
1/2-1 tsp cumin (optional)
1 small onion, sliced
Salt and pepper
Directions
- Place the onion slices on the bottom of the slow cooker and put the chicken on top of the onions. Season with salt and pepper. Drizzle the maple syrup all over the chicken.
- Next the sweet potatoes and carrots. Optional: add rosemary and cumin. Season to taste with more salt and pepper over it all.
- Set the slow cooker on low and let cook for 8 hours.
To store as a freezer meal:
- Pack it in a gallon size freezer baggie.
- Label and follow the same order and directions in the first 2 bullets to fill the bags. Remove as much air as you can and seal.
- Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.
- To thaw, place the bags in the fridge overnight. Or quick thaw in a bowl of warm water.
