INGREDIENTS:
1 cup cooked quinoa
1/2 cup unsweetened almond milk
1/4 cup nonfat Greek yogurt
1 tablespoon chia seeds
1 teaspoon vanilla extract
1 teaspoon honey
frozen fruit of choice

- Combine all the ingredients except the fruit. Be sure to mix well. Stir in frozen fruit. If using fresh fruit, I recommend adding the fruit the next morning, right before you eat it.
- Cover and place in the refrigerator at least 4 hours or overnight.
- The next morning, remove from the fridge and enjoy.
