Yesterday was food prep day. Do you know how hard it was to not eat all of this when I was making it? I mean, look at those bright, pretty colors!! I can't wait for lunch today!! Spicy chicken + sweet pineapple. Perfect combination of sweet & spicy - just like me!!
Thai Curry Chicken Salad with Pineapple, Cucumbers, Red Peppers, and Creamy Dijon Dressing

INGREDIENTS:
Salad:
4 Boneless, Skinless Chicken Breasts
Spring mix, romaine lettuce
1 Red Bell Pepper, chopped
1 Cucumber, sliced
2 cups Pineapple, chopped
1/2 cup Red Onion, chopped
1-2 teaspoons Coconut Oil
Spice rub:
5 Tablespoons Curry Powder
1 Tablespoon Onion Powder
2 to 5 teaspoons Crushed Red Pepper Flakes (depends on how spicy you like it. I use 3)
3 teaspoons Sea Salt
2 teaspoon Dried Parsley
Creamy Dijon Dressing:
3/4 Cup Plain Greek Yogurt
2 1/2 Tablespoons Dijon Mustard
Spice rub:
5 Tablespoons Curry Powder
1 Tablespoon Onion Powder
2 to 5 teaspoons Crushed Red Pepper Flakes (depends on how spicy you like it. I use 3)
3 teaspoons Sea Salt
2 teaspoon Dried Parsley
Creamy Dijon Dressing:
3/4 Cup Plain Greek Yogurt
2 1/2 Tablespoons Dijon Mustard
2 1/2 Tablespoons Maple Syrup
1 1/2 Tablespoon Lemon Juice
Salt & Pepper, to taste

- In a small bowl, combine the curry powder, onion powder, crushed red pepper flakes, sea salt, and parsley.
- Completely cover each chicken breast with the spice rub.
- Note: I always have leftover spice rub - I love saving it to save time for next time. Just be sure to keep only the non-contaminated spice mix. Store it in an airtight container.
- In a large saute pan or skillet, heat coconut oil over medium heat.
- Place chicken breasts in the pan and cook for about 10 minutes on each side until cooked throughout. Remove from heat and let cool for a few minutes. Slice the chicken for the salads.
- Place all ingredients for the Creamy Dijon Dressing in a bowl or jar. Using a whisk, mix until combined.
- Divide the salad dressing evenly into 4 or 5 containers (this all depends on your calorie target)
Salad:
- Divide the chicken and salad ingredients into four or five containers (again, this depends on you and your calorie target).
- And ENJOY lunch everyday this week!!
